		<description>enjoy reading anything and everything about Yucatan.  I am currently looking for old recipes for &lt;em&gt;jarabes&lt;/em&gt; for &lt;em&gt;raspados&lt;/em&gt;.  I remember one that was vanilla that actually had pieces of cinnamon sticks. The most delicious &lt;em&gt;raspada &lt;/em&gt;was half vanilla and &lt;em&gt;fresa&lt;/em&gt;(strawberry).  If any one could help me with this craving I would be ever so thankful.</description>

I have that slender Hacienda Teya cookbook from my last visit to Merida but it just scratches the surface.

With Spring appearing I&#039;m soon going to try a pibil-inspired grilled chicken - sort of a cross between &lt;em&gt;poc chuc&lt;/em&gt; and &lt;em&gt;pollo pibil&lt;/em&gt;: butterfly the bird, marinate in an approximation of &lt;em&gt;pibil &lt;/em&gt;marinade (orange juice, cider vinegar, maybe some lime juice with annatto paste &amp; some fresh &lt;em&gt;epazote &lt;/em&gt;if I can get it (or oregano if not), then grill.

If I get lucky I might find Seville oranges at our local &quot;gourmet&quot; produce store.
